This is healthy chutney recipe made from Madras cucumber peels. This chutney goes well with rice, roti, dosa etc.,
2.grated coconut – 1/4 cup
3.Tamrind pulp- 3 tbsp
4.Red chillies -3
5.Mastard seed-1/2 tbsp
6.Cumin seeds-1/2 tbsp
7.Hing – A pinch
8.Curry leaves few
9.Coconut oil-2 tbsp
10.coriander leaves few
11.Salt -1/2 tbsp
1.Wash and peel the skin of cucumber.
2.Boil cucumber peel, 2 red chillies,tamrind for 5 minutes.
3.Grind boiled mixture once it is cool with coconut,salt,cumin seeds to fine paste.
4.Season it with mastard seed,curry leaves,hing,red chilli in coconut oil.
5.Add the ground paste into seasoning mix well.
5.Add finely chopped coriander leaves from top.
