Recipe for Ekadashi Lemon pickle

Lemon pickle is a famous Indian condiment made with lemons and spices, its very healthy and tasty side item in Indian meal.

1.Lemon -20
2.Jaggery – 250 gm
3.Cloves -10
4.Cinnamon -3 inch stick
5.Salt – 1/2 cup
6.Red chilli powder -4 tsp

1.Cut the lemon into 4 pieces, put salt and keep it in tight jar.
2.Mix well the lemon piece every day until it becomes soft and can be smashed with finger, it may take around 10-15 days.
3.Take a pan add jaggery, let it melt completely.
4.Once jaggery syrup (it should not be like one string consistency) is done add crushed cinnamon, cloves, red chilli powder, lemon pieces with whatever salt water it has formed.
5.Boil for 5 min with continuous stirring so that lemon well combines with jaggery syrup.
6.It is sweet and sour lemon pickle
